Ox tripe stinks! I had never thought of that, when it was in the fridge it didn’t smell bad. Although, when you boil it, Oh man. I don’t want to lose your appetite but, they say stinks good! Ox tripe or Callos is called a “poor man dish” because it’s inexpensive. Lol. It was expensive, maybe until it become very popular.
I think the taste is good. Here’s the procedure.
Boil the Ox tripe or Callos in 2 hours with garlic, onion, ginger, salt, lemon, and cumin seeds. Do not open the casserole, just leave it there boiling and turn at a low heat within 2 hours. If the time is up then drain and cut them into two.
Ingredients needed: Longganiza, sliced hotdog, potato & carrots cut into cubes, bell pepper, tomato sauce, water, pineapple chunks in can, onion, garlic, sugar.
After 2 hours. You need to slice and boil the longganiza to soften and tenderize, fry them until it turns to golden brown separately. In a large casserole fry in oil the hotdogs for 2 minutes, add onion, garlic, potato and carrots for 3 minutes. Add the Longganiza, sugar and pour the tomato sauce, bellpepper, water, and pineapple chunks with its juice. Mixed it up and adjust the taste accordingly.
